Happy Sunday Everyone!

How was your weekend?

Mine was glorious. Yesterday Lee and I spent the day doing *stuff*. It was gorgeous outside. We visited the St.Jacobs Market (be on the look out for a delicious maple syrup post from me this week) ;) I LOVE the St.Jacobs Market. It was soooo busy yesterday and lots of outdoor vendors were out and about! The scent was heavily (think...sausage, back bacon, veggie burgs on a bun!)  We then went out to our favorite Thai restaurant where I tried a vegetarian pad Thai (LOVED IT), explored a local British treats shop...where yes, I DID buy some Easter eggs (galaxy mmm), and then at night, we spent some time with my grandpa at the hospital and brought him some of his favorite treats :) All in all...it was a day well spent.

I wanted to share with you some advice I found from an old cookbook :)

I found it most amusing...

How To Preserve Children

1 large grassy field

1/2 dozen children

2 or 3 small dogs

Pinch of brook and some pebbles

Mix the children and the dogs well together and put them in the field, stirring constantly. Pour the brook over the pebbles, sprinkle the fields with flowers. Spread over all a deep blue sky and bake in the hot sun. When thoroughly brown, remove and set away to cool in a bathtub.

How To Preserve a Husband (or wife)

First, use extreme care in selection. Find one tender and healthy. If you choose one recklessly, it may not keep. Do not refrigerate. Keep at room temperature. Too much heat makes them turn sour. Sweeten with smiles and spice with patience. To ensure consistency, stir gently; never beat and don't leave unattended. To add a delicious flavor, sprinkle generously with praise and appreciation. Keep a small, steady flame going at all times. The poor specimen may be improved if you follow these instructions and will keep for a number of years.

Good evenin everyone!

Wow..the week is ALMOST over.

Can you believe it!?

I've gotten alot accomplished this week...but not enough! I still will have a long to do list going into the weekend :( Hate when that happens.

Betcha didn't know that I have a visitor this week!

Since he made me dinner tonight...I decided to make dessert!

Two of my favorite ingredients!

Coconut+Chocolate ;)

Lee cracked open a coconut for me today! He's handy to have around,  I guess ;)

There is NO method to my baking madness!

You have been warned!

Vegan Coconut Chocolate Fudge Brownies

1 cup whole wheat flour

1 cup cake/pastry flour

2 cups unrefined cane sugar

3/4 cup unsweetened cocoa powder

1 teaspoon baking powder

1 teaspoon salt

1 cup water

1 cup unsweetened applesauce

1 teaspoon vanilla extract

Half cup shredded coconut (sweetened or unsweetened...your choice)

I also added a little more then half of a dark chocolate with espresso beans endangered species bar (chopped up)

Directions: 1)  Preheat the oven to 350 degrees F (175 degrees C). 2) In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, applesauce and vanilla extract, coconut and any extras; mix until well blended. Spread evenly in a 9x13 inch baking pan. Hint: I used a smaller pan...for thick, luscious brownies! 3) Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares. I enjoy them chilled over night, the next day!

The endangered species bar gave these a nice kick!

It was a chocolatey night ;) One small square did me and quenched my t.o.m cravings!!!

These are moist and have a bold chocolate flavor, without being too sweet, and without all that nasty fat!
