The Art Of Omelette Making

I probably should have a picture to back this up…but I was just to lazy to take my card out of my computer that was upstairs and  put it in my camera that was downstairs.

I just made the best omelette. I was so proud of it! I think I have it down to an art :)

Here is what you do…

You need one of those small omelette making pans… if the pan is too big the eggs will break when folded over!

I washed and cut up a green pepper while the stove top got hot (around level 4)

I then added a touch of unsalted butter (you could add becel or olive oil)

I used the entire (smallish) green pepper and cooked them down for about 5 minutes…

Mean while I cracked 2 brown organic eggs and whipped them to a frenzy and added fleur de sel and a touch of water…

Once the green peppers cooked down I added the eggs and as they cooked I lifted the pan off and shook it around a little so that the eggs would cook evenly (as Julia Child does).

Once the eggs cooked a little I added soome low fat cheese all throughout the omlette and then I folded the side over and slid it onto a plate.

Enjoy with some sugarless ketchup or hot sauce ;)

The eggs were fluffy and cooked perfectly and the cooked down green peppers = YUM!

This will hold me over well!

No picture needed- sounds delicious enough! I love love peppers mixed in with egg- something about the combo is just perfect. Hope you had a just fabulous weekend!

I unfortunately get very frustrated with omelets so they usually end up as one big scramble! Oh well….it all tastes the same:)

A few years ago I went thru a faze of HATING eggs!
